Description

Deliciously roasted mushrooms with a rich flavor, perfect as a side dish, topping, or appetizer.


Ingredients

  • 2 lbs Cremini mushrooms, whole or halved depending on size
  • 4 tbsp Olive oil, extra virgin
  • 4 cloves Garlic, minced
  • 2 tbsp Fresh thyme leaves
  • 1 tbsp Balsamic vinegar
  • 1 tsp Sea salt, or to taste
  • ½ tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, chopped (for garnish)
  • 1/4 cup Grated Parmesan cheese (for garnish, optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Gently rinse mushrooms under cool running water and pat dry with a paper towel.
  3. Leave small mushrooms whole and halve or quarter larger ones into bite-sized pieces.
  4. In a large bowl, whisk together olive oil, minced garlic, fresh thyme leaves, balsamic vinegar, sea salt, and black pepper.
  5. Add mushrooms to the marinade and toss gently to coat. Let sit for 5–10 minutes.
  6. Spread marinated mushrooms in a single layer on a baking sheet.
  7. Roast in the preheated oven for 20–25 minutes, stirring halfway through.
  8. Check for doneness and remove from oven, garnish with fresh parsley and optional Parmesan.
  9. Serve immediately.

Notes

Ensure mushrooms are dried well to prevent sogginess. Use parchment paper for easy cleanup.
