A comforting yet innovative take on a classic dish, made with ground chicken and Parmesan cheese.

- 2 tablespoons olive oil
- 80g yellow onion, finely diced
- 2 cloves garlic, minced
- 900g ground chicken
- 60g seasoned breadcrumbs
- 2 teaspoons whole milk
- 30g freshly grated Parmesan cheese (for the meatloaf mix)
- 1 large egg, lightly beaten
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- 120ml marinara sauce (for glaze)
- 2 tablespoons Panko breadcrumbs (for topping/texture)
- 20g freshly grated Parmesan cheese (for topping/serving)
Instructions
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 more minute. Remove from heat and let cool.
- Combine seasoned breadcrumbs with whole milk in a mixing bowl and let sit for 5 minutes.
- Add cooled onion and garlic mixture to the breadcrumb mix. Then add ground chicken, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
- Preheat oven to 375°F (190°C) and line a baking sheet with foil.
- Shape the meatloaf mixture into an even oblong loaf and place it on the baking sheet.
- Bake for 30 minutes. Remove and cover with marinara sauce.
- Return to oven and bake for an additional 25-35 minutes until the internal temperature reaches 165°F (74°C).
- Let rest for 10-15 minutes before slicing. Serve with Panko breadcrumbs and Parmesan cheese on top.
Notes
For best results, allow the meatloaf to rest after baking for moist texture.
