- 1 lb ground chicken, turkey, or beef
- ½ cup breadcrumbs
- ½ cup grated Parmesan
- 1 egg
- 2 garlic cloves, minced
- 2 tbsp parsley, chopped
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 12 oz linguine
- 4 tbsp butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan
- Salt & pepper, to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook until al dente according to package directions. Before draining, reserve 1 cup of pasta water, then drain the linguine and set aside.
- In a bowl, combine meatball ingredients: ground meat, breadcrumbs, grated Parmesan, egg, minced garlic, chopped parsley, salt, and black pepper. Mix gently until just combined.
- Form the mixture into small bite-sized balls (about 1 inch in diameter).
- Heat olive oil in a large skillet over medium-high heat. Add meatballs and cook until golden-brown on all sides (about 6–8 minutes). Remove meatballs and tent with foil to keep warm.
- In the same skillet, reduce heat to medium and add butter. When melted, add minced garlic and sauté until fragrant (about 30–45 seconds).
- Stir in heavy cream and chicken broth, whisking to combine and scraping up any browned bits. Bring to a gentle simmer.
- Add grated Parmesan while whisking until the cheese melts and the sauce is smooth. Season with salt and black pepper as needed, adjusting with reserved pasta water if the sauce is too thick.
- Add the cooked linguine to the skillet, tossing to coat evenly in the sauce.
- Nestle meatballs on top or toss gently to distribute. Garnish with extra grated Parmesan and chopped fresh parsley. Serve hot.
Notes
For best results, use freshly grated Parmesan and avoid overcrowding the pan while cooking meatballs.
