- 5 oz baby arugula
- 3 ripe peaches, sliced into thick wedges
- 1/2 cup Parmesan, shaved and/or grated
- 1/4 cup toasted pine nuts
Dressing:
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic glaze
- 1 tablespoon lemon juice
- 1/2 teaspoon flaky salt (or to taste)
Instructions
- Grill the peaches: Brush the peach wedges lightly with olive oil. Grill over medium-high heat for 1–2 minutes per side until caramelized. Let them cool slightly.
- Toss the arugula: In a large bowl, toss the arugula gently with the olive oil and lemon juice.
- Assemble the salad: Arrange the grilled peaches on top of the arugula. Sprinkle with shaved or grated Parmesan and toasted pine nuts.
- Finish: Drizzle with balsamic glaze and season with flaky salt to taste. Serve immediately.
Notes
For a nut-free version, omit the pine nuts or substitute with toasted sunflower seeds. Burrata or goat cheese can be used instead of Parmesan for a creamier twist.
