- 1 cup vanilla custard (store-bought or homemade)
- 2 ripe peaches, thinly sliced
- ¼ cup honey
- ½ cup whipped cream (optional)
- Fresh mint leaves (optional)
Instructions
- Prepare the crust: In a bowl, combine graham cracker crumbs and melted butter until the texture resembles wet sand.
- Form tart bases: Press the mixture into mini tart pans, compacting it firmly to create a crust. Chill for 20 minutes in the refrigerator to set.
- Add custard: Spoon vanilla custard evenly into each crust and smooth the surface with a spatula or spoon.
- Arrange peaches: Layer thinly sliced peaches over the custard in a spiral or fan pattern.
- Finish & garnish: Drizzle each tart with honey. Optionally top with a dollop of whipped cream and fresh mint leaves for a decorative finish.
- Chill: Refrigerate the tarts for at least 30 minutes before serving to let the flavors meld and the custard firm slightly.
Notes
You can substitute nectarines or berries for the peaches. For extra crunch, sprinkle crushed pistachios or toasted coconut on top. These are best enjoyed the same day but can be kept chilled for up to 24 hours.
