Ingredients

  • 3 large ripe peaches, cut into wedges (or use nectarines)
  • 1 pint cherry tomatoes, halved
  • 1/2 small shallot, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 10 large basil leaves, chopped
  • 10 large mint leaves, chopped

For the Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar (or white wine vinegar)
  • Juice of 1/2 a lemon
  • 1 tsp honey (or maple syrup for vegan)
  • 1/2 tsp garlic powder (or 2 cloves minced garlic)
  • Salt and pepper to taste

Instructions

  1. In a small bowl or mason jar, combine all the dressing ingredients. Whisk or shake well to emulsify.
  2. In a large mixing bowl, combine the peach wedges, cherry tomatoes, shallots, feta cheese, basil, and mint.
  3. Drizzle the dressing over the salad. Gently toss to coat everything evenly.
  4. Season with salt and pepper to taste.
  5. Serve immediately or chill for 30 minutes for extra flavor fusion.

Notes

For a dairy-free version, omit feta or substitute with a vegan cheese. Add toasted pine nuts or almonds for crunch.
