Description
This refreshing summer salad combines juicy peaches, sweet cherry tomatoes, and crumbled feta with a tangy herb dressing—perfect for a light lunch or side dish.
Ingredients

- 3 large ripe peaches, cut into wedges (or use nectarines)
- 1 pint cherry tomatoes, halved
- 1/2 small shallot, thinly sliced
- 1/2 cup feta cheese, crumbled
- 10 large basil leaves, chopped
- 10 large mint leaves, chopped
For the Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar (or white wine vinegar)
- Juice of 1/2 a lemon
- 1 tsp honey (or maple syrup for vegan)
- 1/2 tsp garlic powder (or 2 cloves minced garlic)
- Salt and pepper to taste
Instructions
- In a small bowl or mason jar, combine all the dressing ingredients. Whisk or shake well to emulsify.
- In a large mixing bowl, combine the peach wedges, cherry tomatoes, shallots, feta cheese, basil, and mint.
- Drizzle the dressing over the salad. Gently toss to coat everything evenly.
- Season with salt and pepper to taste.
- Serve immediately or chill for 30 minutes for extra flavor fusion.
Notes
For a dairy-free version, omit feta or substitute with a vegan cheese. Add toasted pine nuts or almonds for crunch.
