Description
A cozy and naturally sweet peach upside-down cake made with honey, tender peaches, and a buttery vanilla sponge. Optionally spiced with cinnamon and ginger for extra warmth. Delicious served with whipped cream or ice cream.

- 2–3 fresh peaches, sliced thin (or 1 can of peaches in juice, drained)
- 1/3 cup honey (plus more for drizzling)
- 2 tbsp unsalted butter (for topping)
- 1/4 cup brown sugar (optional)
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened (for batter)
- 2/3 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup milk or buttermilk
- Optional: 1/2 tsp cinnamon, 1/4 tsp ginger
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or cast iron skillet.
- Prepare the topping: In the pan, melt 2 tbsp of butter and spread evenly. Drizzle 1/3 cup honey over the butter. Arrange the peach slices in a circular pattern. Optionally, sprinkle with brown sugar or cinnamon.
- Make the batter: In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, salt, and optional spices. Add the dry ingredients to the wet mixture in batches, alternating with milk. Mix just until combined.
- Assemble and bake: Pour the batter evenly over the arranged peaches. Smooth the top with a spatula.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Cool and flip: Let the cake rest for 10–15 minutes. Run a knife around the edges, place a plate over the pan, and carefully invert. If any fruit sticks, gently replace it and drizzle with extra honey.
- Serve: Serve warm or at room temperature with whipped cream, crème fraîche, or vanilla ice cream if desired.
Notes
Fresh peaches work best, but canned peaches (in juice) can be used. Try spicing the batter with cardamom for a twist. Use a cast iron skillet for beautiful caramelization.
