- 4 cups cubed seedless watermelon
- 2 ripe peaches, sliced
- ½ cup crumbled feta cheese
- ¼ cup fresh mint leaves (or basil)
- 1 small cucumber, thinly sliced (optional)
- ¼ small red onion, thinly sliced (optional)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lime juice or balsamic glaze
- Salt and black pepper to taste
Instructions
- Prep the fruit: Cube the watermelon and thinly slice the peaches.
- Mix the base: In a large bowl, combine the watermelon, peaches, cucumber, and red onion.
- Add herbs & cheese: Sprinkle with fresh mint or basil and crumbled feta.
- Drizzle the dressing: In a small bowl, whisk together olive oil and lime juice or balsamic glaze. Pour over the salad.
- Season: Lightly toss and season with salt and pepper.
- Chill and serve: Refrigerate for 10–15 minutes before serving for a crisp and refreshing taste.
Notes
For a vegan version, omit the feta or use plant-based cheese. Add arugula for extra texture and peppery flavor.
