Ingredients

  • 1 small cucumber, thinly sliced (optional)
  • ¼ small red onion, thinly sliced (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime juice or balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. Prep the fruit: Cube the watermelon and thinly slice the peaches.
  2. Mix the base: In a large bowl, combine the watermelon, peaches, cucumber, and red onion.
  3. Add herbs & cheese: Sprinkle with fresh mint or basil and crumbled feta.
  4. Drizzle the dressing: In a small bowl, whisk together olive oil and lime juice or balsamic glaze. Pour over the salad.
  5. Season: Lightly toss and season with salt and pepper.
  6. Chill and serve: Refrigerate for 10–15 minutes before serving for a crisp and refreshing taste.

Notes
