Description

These peach crumble bars feature a buttery crust, juicy cinnamon-peach filling, and a golden streusel topping. They’re perfect for summer gatherings or as a chilled treat anytime.

🧈 For the Crust and Topping:

  • 2½ cups (350g) all-purpose flour
  • ⅔ cup (140g) granulated sugar
  • ½ tsp salt
  • 1¼ cups (280g) cold unsalted butter, cubed
  • ¼ cup (50g) brown sugar (preferably dark)

🍑 For the Peach Filling:

  • 1 cup (200g) granulated sugar
  • ¼ cup (35g) all-purpose flour
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 5 cups peeled and chopped peaches (about 78 medium peaches)
  • 6 tbsp (90ml) heavy cream
  • ½ tsp vanilla extract (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (180°C). Line a 9×13-inch pan with parchment paper.
  2. Make the Crust: In a large bowl, combine flour, sugar, and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Form Crust Base: Press ⅔ of the mixture firmly into the bottom of the prepared pan. Bake for 15 minutes.
  4. Make Crumble Topping: Add brown sugar to the remaining ⅓ of dough. Optionally, stir in ½ cup oats or chopped nuts. Set aside.
  5. Prepare Peach Filling: In a separate bowl, combine sugar, flour, cinnamon, and salt. Add the chopped peaches and toss to coat. Stir in heavy cream and vanilla if using.
  6. Assemble: Spread peach filling evenly over the baked crust. Sprinkle the crumble topping over the peaches.
  7. Bake: Return to the oven and bake for 45 minutes, until the top is golden and the filling is bubbling at the edges.
  8. Cool & Chill: Let bars cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing and serving.

Notes

You can add oats, chopped pecans, or almonds to the topping for extra crunch. For a sweeter twist, drizzle bars with vanilla glaze before serving.
