Ingredients

  • 1 cup Greek yogurt (full-fat)
  • ½ cup peanut butter (natural, creamy, or chunky)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips (optional)
  • ¼ cup chopped peanuts (optional)

Instructions

  1. Line a 9×9 inch baking dish with parchment paper.
  2. In a mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract, and mix until smooth.
  3. Fold in mini chocolate chips and/or chopped peanuts if using.
  4. Pour the mixture into the prepared baking dish and smooth the top.
  5. Freeze for 4 to 6 hours or until solid.
  6. Lift the bars out using parchment paper and cut into desired sizes.
