- 1 cup Greek yogurt (full-fat)
- ½ cup peanut butter (natural, creamy, or chunky)
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ¼ cup mini chocolate chips (optional)
- ¼ cup chopped peanuts (optional)
Instructions
- Line a 9×9 inch baking dish with parchment paper.
- In a mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract, and mix until smooth.
- Fold in mini chocolate chips and/or chopped peanuts if using.
- Pour the mixture into the prepared baking dish and smooth the top.
- Freeze for 4 to 6 hours or until solid.
- Lift the bars out using parchment paper and cut into desired sizes.
Notes
For neat slices, warm your knife under hot water, dry it, then slice and wipe between cuts.
