  • 1 cup corn syrup
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs with melted butter; press into the bottom of the springform pan to create the crust.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar, mixing well after each addition.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Pour the cheesecake mixture over the prepared crust and smooth the top with a spatula.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set; allow to cool on a wire rack.
  7. For the topping, combine corn syrup, brown sugar, unsalted butter, vanilla extract, and salt in a saucepan over medium heat; stir until melted and smooth.
  8. Stir in chopped pecans and simmer for a few minutes.
  9. Once the cheesecake has cooled, pour the topping over it and spread evenly.
  10. Refrigerate for at least 4 hours or overnight before serving.
