Instructions
- Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs with melted butter; press into the bottom of the springform pan to create the crust.
- In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar, mixing well after each addition.
- Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- Pour the cheesecake mixture over the prepared crust and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set; allow to cool on a wire rack.
- For the topping, combine corn syrup, brown sugar, unsalted butter, vanilla extract, and salt in a saucepan over medium heat; stir until melted and smooth.
- Stir in chopped pecans and simmer for a few minutes.
- Once the cheesecake has cooled, pour the topping over it and spread evenly.
- Refrigerate for at least 4 hours or overnight before serving.
