Delicious peppermint brownies that combine rich chocolate with a refreshing hint of peppermint, perfect for the holidays.

- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup chocolate chips
- 1 cup heavy cream (for ganache)
- 1 cup semi-sweet chocolate (for ganache)
- Crushed peppermint for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
- In a large bowl, mix together the sugar and melted butter.
- Add the eggs and vanilla, and stir until well combined.
- In another bowl, whisk together the cocoa powder, flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared pan.
- Bake for 20-25 minutes, until slightly underbaked.
- While the brownies are baking, prepare the ganache by heating the heavy cream in a saucepan until it just begins to simmer.
- Remove from heat and add the chopped semi-sweet chocolate, stirring until smooth.
- Once the brownies have cooled slightly, pour the ganache over the top and sprinkle with crushed peppermint.
- Allow the ganache to set before cutting into squares and serving.
Notes
For an extra minty flavor, add a few drops of peppermint extract to the batter. Store leftovers in an airtight container at room temperature for up to 3 days.
