Description

Delicious peppermint brownies that combine rich chocolate with a refreshing hint of peppermint, perfect for the holidays.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chocolate chips
  • 1 cup heavy cream (for ganache)
  • 1 cup semi-sweet chocolate (for ganache)
  • Crushed peppermint for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a large bowl, mix together the sugar and melted butter.
  3. Add the eggs and vanilla, and stir until well combined.
  4. In another bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared pan.
  8. Bake for 20-25 minutes, until slightly underbaked.
  9. While the brownies are baking, prepare the ganache by heating the heavy cream in a saucepan until it just begins to simmer.
  10. Remove from heat and add the chopped semi-sweet chocolate, stirring until smooth.
  11. Once the brownies have cooled slightly, pour the ganache over the top and sprinkle with crushed peppermint.
  12. Allow the ganache to set before cutting into squares and serving.

Notes

For an extra minty flavor, add a few drops of peppermint extract to the batter. Store leftovers in an airtight container at room temperature for up to 3 days.
