Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 teaspoon peppermint extract
  • 1/2 cup brewed coffee, cooled

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until fluffy, then add the eggs one at a time and mix in vanilla.
  4. Alternate adding the dry mixture and buttermilk, mixing until just combined.
  5. Divide the batter; mix cocoa powder and peppermint extract into one half and brewed coffee into the other.
  6. Layer the batters in the prepared pan and swirl with a knife.
  7. Bake for 50 to 60 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a rack.
