Ingredients

- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 teaspoon peppermint extract
- 1/2 cup brewed coffee, cooled
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the butter and sugar until fluffy, then add the eggs one at a time and mix in vanilla.
- Alternate adding the dry mixture and buttermilk, mixing until just combined.
- Divide the batter; mix cocoa powder and peppermint extract into one half and brewed coffee into the other.
- Layer the batters in the prepared pan and swirl with a knife.
- Bake for 50 to 60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a rack.
Notes
Don’t forget to cool the loaf before slicing to maintain its texture.
