Description

A comforting one-pot meal featuring tender chicken and rice topped with a bright cilantro-lime sauce.


Ingredients

  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric (optional)
  • Salt and black pepper, to taste
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup long-grain rice
  • 1¾ cups chicken broth
  • ½ cup frozen peas
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, cumin, and paprika. Sear chicken until golden brown, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onion and red bell pepper for 3-4 minutes. Add minced garlic, cooking for another minute.
  3. Stir in rice, allowing it to toast slightly for about 2 minutes.
  4. Return chicken to the pot and add chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until rice is cooked.
  5. Stir in frozen peas, cilantro, and lime juice. Fluff the rice and serve.

Notes

This dish reheat beautifully and can be transformed into stuffed peppers or a quick lunch bowl.
