Description

A comforting chicken and rice casserole enveloped in a creamy, cheesy sauce, perfect for family dinners.


Ingredients

Scale
  • 1½ cups long grain white rice
  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk
  • 1 envelope onion soup mix (or homemade)
  • 1½ cups shredded cheddar cheese
  • 3 boneless skinless chicken breasts (or thighs)
  • Salt and pepper

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
  2. In a bowl, mix rice, soups, milk, water, and onion soup mix.
  3. Pour the mixture into the prepared pan.
  4. Add half of the cheese, stirring gently.
  5. Nestle the chicken breasts on top of the mixture.
  6. Cover firmly with foil and bake for 90 to 120 minutes.
  7. Remove the foil and sprinkle the remaining cheese on top.
  8. Let it sit for 15 to 20 minutes before serving.
