A comforting chicken and rice casserole enveloped in a creamy, cheesy sauce, perfect for family dinners.
Ingredients

- 1½ cups long grain white rice
- 2 cans cream of chicken or mushroom soup
- 1 cup water
- 2 cups milk
- 1 envelope onion soup mix (or homemade)
- 1½ cups shredded cheddar cheese
- 3 boneless skinless chicken breasts (or thighs)
- Salt and pepper
Instructions
- Preheat oven to 350°F and grease a 9×13 inch baking dish.
- In a bowl, mix rice, soups, milk, water, and onion soup mix.
- Pour the mixture into the prepared pan.
- Add half of the cheese, stirring gently.
- Nestle the chicken breasts on top of the mixture.
- Cover firmly with foil and bake for 90 to 120 minutes.
- Remove the foil and sprinkle the remaining cheese on top.
- Let it sit for 15 to 20 minutes before serving.

Garnish with fresh herbs or serve with a side salad for balanced flavors.
