Ingredients
1 can of cream of mushroom soup
1 cup of cooked rice
1 cup of mixed vegetables (frozen or fresh)
1 cup of shredded cheese (your choice)
1 – 2 cups of cooked chicken or alternative protein
Salt and pepper to taste
Optional: breadcrumbs or crunchy toppings for garnish

Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cream of mushroom soup, cooked rice, mixed vegetables, shredded cheese, cooked chicken, and salt and pepper. Stir until well incorporated.
Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
Sprinkle breadcrumbs or crunchy toppings on top if using.
Bake for 25-30 minutes, or until bubbly and the top is golden brown.
Let it cool for a few minutes before serving.
