Ingredients

  • 1 can of cream of mushroom soup
  • 1 cup of cooked rice
  • 1 cup of mixed vegetables (frozen or fresh)
  • 1 cup of shredded cheese (your choice)
  • 1 – 2 cups of cooked chicken or alternative protein
  • Salt and pepper to taste
  • Optional: breadcrumbs or crunchy toppings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cream of mushroom soup, cooked rice, mixed vegetables, shredded cheese, cooked chicken, and salt and pepper. Stir until well incorporated.
  3. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  4. Sprinkle breadcrumbs or crunchy toppings on top if using.
  5. Bake for 25-30 minutes, or until bubbly and the top is golden brown.
  6. Let it cool for a few minutes before serving.
