A budget-friendly casserole that combines creamy mushroom soup, rice, vegetables, and protein for a comforting meal.
Ingredients

- 1 can of cream of mushroom soup
- 1 cup of cooked rice
- 1 cup of mixed vegetables (frozen or fresh)
- 1 cup of shredded cheese (your choice)
- 1–2 cups of cooked chicken or alternative protein
- Salt and pepper to taste
- Optional: breadcrumbs or crunchy toppings for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cream of mushroom soup, cooked rice, mixed vegetables, shredded cheese, cooked chicken, and salt and pepper. Stir until well incorporated.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle breadcrumbs or crunchy toppings on top if using.
- Bake for 25-30 minutes, or until bubbly and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
Store leftovers in an airtight container. Can be prepared ahead of time and refrigerated. Freeze in portions for quick meals.
