- 1 pound pork tenderloin
- 2 tablespoons Dijon mustard
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon fresh rosemary or thyme (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin with salt and pepper.
- In an oven-safe skillet, heat olive oil over medium-high heat and sear the pork on all sides until browned.
- In a bowl, mix Dijon mustard and heavy cream together.
- Pour the Dijon cream sauce over the pork.
- Transfer the skillet to the preheated oven and roast for about 20–25 minutes or until the pork is cooked through (internal temperature of 145°F/63°C).
- Let it rest for a few minutes before slicing. Serve the sliced pork with the Dijon cream sauce drizzled on top.
Notes
For a smoother sauce, strain through a fine mesh sieve before serving. Refrigerate leftovers in an airtight container for up to 4 days.
