Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh rosemary or thyme (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork tenderloin with salt and pepper.
  3. In an oven-safe skillet, heat olive oil over medium-high heat and sear the pork on all sides until browned.
  4. In a bowl, mix Dijon mustard and heavy cream together.
  5. Pour the Dijon cream sauce over the pork.
  6. Transfer the skillet to the preheated oven and roast for about 20–25 minutes or until the pork is cooked through (internal temperature of 145°F/63°C).
  7. Let it rest for a few minutes before slicing. Serve the sliced pork with the Dijon cream sauce drizzled on top.

Notes

For a smoother sauce, strain through a fine mesh sieve before serving. Refrigerate leftovers in an airtight container for up to 4 days.
