Ingredients
1 cup Coconut Milk
1 cup Shredded Coconut
2 large Eggs
3/4 cup Sugar
1 cup Flour
1 tbsp Baking Powder

Instructions
Preheat your oven to 350°F (175°C) and prepare your baking molds by greasing them.
Optionally, dust the molds with flour or shredded coconut.
Gather and measure out all your ingredients.
Melt the butter and let it cool slightly.
In a large mixing bowl, combine coconut, sugar, flour, and salt.
In another bowl, whisk the eggs and then combine with dry ingredients.
Add coconut milk and melted butter, and mix gently until just combined.
Let the batter rest for 15-20 minutes for better texture.
Fill the prepared molds with batter and bake for approximately 25-35 minutes.
Check for doneness. Cool in molds for 10-15 minutes before transferring to a wire rack.
Optionally dust with powdered sugar before serving.
