- 1 cup Coconut Milk
- 1 cup Shredded Coconut
- 2 large Eggs
- 3/4 cup Sugar
- 1 cup Flour
- 1 tbsp Baking Powder
Instructions
- Preheat your oven to 350°F (175°C) and prepare your baking molds by greasing them.
- Optionally, dust the molds with flour or shredded coconut.
- Gather and measure out all your ingredients.
- Melt the butter and let it cool slightly.
- In a large mixing bowl, combine coconut, sugar, flour, and salt.
- In another bowl, whisk the eggs and then combine with dry ingredients.
- Add coconut milk and melted butter, and mix gently until just combined.
- Let the batter rest for 15-20 minutes for better texture.
- Fill the prepared molds with batter and bake for approximately 25-35 minutes.
- Check for doneness. Cool in molds for 10-15 minutes before transferring to a wire rack.
- Optionally dust with powdered sugar before serving.
Notes
For best results, use fresh shredded coconut and weigh flour for accuracy.
