- 1 bone-in standing rib roast (about 5–7 pounds)
- 3–4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Preheat your oven to 450°F (230°C).
- In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and black pepper.
- Rub this mixture all over the prime rib, ensuring it is well coated.
- Place the roast in a roasting pan, bone side down.
- Roast in the preheated oven for 20 minutes. Then, reduce the temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare (about 1.5 to 2 hours total).
- Remove the roast from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute.
- Slice and serve for a delicious holiday meal.
Notes
Allow the roast to sit at room temperature for about an hour before cooking for even cooking throughout. Use a meat thermometer for accuracy.
