Description

Ingredients

  • 1 bone-in standing rib roast (about 57 pounds)
  • 34 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, olive oil, salt, and black pepper.
  3. Rub this mixture all over the prime rib, ensuring it is well coated.
  4. Place the roast in a roasting pan, bone side down.
  5. Roast in the preheated oven for 20 minutes. Then, reduce the temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare (about 1.5 to 2 hours total).
  6. Remove the roast from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute.
  7. Slice and serve for a delicious holiday meal.

Notes

Allow the roast to sit at room temperature for about an hour before cooking for even cooking throughout. Use a meat thermometer for accuracy.
