Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the pumpkin puree, vegetable oil, sugar, brown sugar, and eggs. Mix until smooth and well blended.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  5. In another bowl, beat the softened cream cheese, 1/4 cup sugar, and an egg until smooth and creamy.
  6. Pour half of the pumpkin batter into the prepared loaf pan, spreading it evenly.
  7. Spoon the cream cheese mixture over the pumpkin batter, then top with the remaining pumpkin batter.
  8. Gently swirl the cream cheese into the pumpkin batter with a knife.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool for a few minutes before slicing and serving.
