Ingredients

  • 1 2/3 cup All Purpose Flour
  • 1 1/4 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs (room temperature)
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt

Instructions

  1. Preheat your oven to 350 degrees and grease and flour a round cake or loaf pan.
  2. In a bowl, mix flour, spices, salt, baking powder, and baking soda; set aside.
  3. In another bowl, cream softened butter and sugar together until fluffy.
  4. Add eggs to the butter mixture, mixing until incorporated.
  5. Stir in pumpkin puree and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing by hand until incorporated.
  7. Pour in warm milk and mix until the batter is smooth.
  8. Pour the batter into the prepared pan and bake: 45-50 minutes for a cake pan or 50-55 minutes for a loaf pan.
  9. Cool in the pan for 15 minutes, then invert onto a plate to cool completely.
  10. Enjoy warm or at room temperature.
