- 1 2/3 cup All Purpose Flour
- 1 1/4 cup granulated sugar
- 1 cup pumpkin puree
- 1/2 cup softened unsalted butter
- 1/2 cup warm milk
- 2 large eggs (room temperature)
- 2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp kosher salt
Instructions
- Preheat your oven to 350 degrees and grease and flour a round cake or loaf pan.
- In a bowl, mix flour, spices, salt, baking powder, and baking soda; set aside.
- In another bowl, cream softened butter and sugar together until fluffy.
- Add eggs to the butter mixture, mixing until incorporated.
- Stir in pumpkin puree and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, mixing by hand until incorporated.
- Pour in warm milk and mix until the batter is smooth.
- Pour the batter into the prepared pan and bake: 45-50 minutes for a cake pan or 50-55 minutes for a loaf pan.
- Cool in the pan for 15 minutes, then invert onto a plate to cool completely.
- Enjoy warm or at room temperature.
Notes
