Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese
  • 1/2 cup butter
  • 4 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, spices, and salt.
  3. In a large bowl, mix sugars, oil, pumpkin, eggs, and vanilla until combined.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick comes out clean.
  6. Allow to cool.
  7. For frosting, beat cream cheese and butter until smooth.
  8. Gradually add powdered sugar and milk until desired consistency is reached.
  9. Once the pumpkin bread has cooled completely, spread the cream cheese frosting on top.
  10. Slice and enjoy!

Notes

Use room temperature ingredients for better mixing. Don’t overmix the batter to retain moisture.
