- For the Pumpkin Spice Streusel:
- 1/2 cup All-purpose flour
- 1/2 cup Brown sugar (packed light or dark)
- 1 tsp Pumpkin pie spice
- 1/4 cup Unsalted butter (melted)
- For the Pumpkin Bread:
- 2 cups All-purpose flour
- 1 tsp Baking soda
- 3 tsp Ground cinnamon
- 2 tsp Pumpkin pie spice
- 1 tsp Salt
- 1/2 cup Unsalted butter (melted and cooled)
- 3/4 cup White granulated sugar
- 3/4 cup Brown sugar (packed light or dark)
- 1 can Pumpkin puree (15oz can)
- 1 tsp Pure vanilla extract
- 2 Large eggs (room temperature)
- For the Cream Cheese Frosting:
- 2 oz Cream cheese (room temperature)
- 2 TBSP Unsalted butter (room temperature)
- 1 tsp Pure vanilla extract
- 1/2 cup Powdered sugar (sifted)
- 1/4 cup Milk
Instructions
- In a bowl, mix 1/2 cup of flour, 1/2 cup brown sugar, and 1 teaspoon pumpkin pie spice. Stir in the melted butter until crumbly. Set aside.
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together 2 cups of flour, baking soda, cinnamon, pumpkin pie spice, and salt.
- In another bowl, combine 1/2 cup melted butter, white and brown sugar, pumpkin puree, vanilla extract, and eggs. Mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour half of the batter into the prepared loaf pan, then sprinkle half of the pumpkin spice streusel on top. Pour the remaining batter on top and finish with the rest of the streusel.
- Bake in the preheated oven for 60-70 minutes or until a toothpick inserted comes out clean. Allow cooling.
- In a mixing bowl, beat the cream cheese and 2 tablespoons of butter until smooth.
- Add vanilla, powdered sugar, and milk. Beat until creamy.
- Once the pumpkin bread has cooled, slice it and spread a generous layer of cream cheese frosting on top. Serve as is or garnish with a sprinkle of cinnamon or chopped nuts.
Notes
Store leftover pumpkin bread in an airtight container at room temperature for up to three days. If frosting is added, refrigerate, wrapping well for up to a week. Freeze slices for up to three months.
