Ingredients

  • 4 ounces cream cheese, softened at room temperature
  • 1/2 cup canned pumpkin puree
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips
  • Orange food coloring, as needed (optional)
  • Granulated sugar, as needed, for rolling
  • Chocolate chips, for topping

Instructions

  1. In a skillet over medium heat, combine the butter, cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir constantly until thickened and blended well.
  2. Add graham cracker crumbs and white chocolate chips, mixing until melted and smooth.
  3. If desired, add food coloring to enhance color. Cook until the mixture pulls away from the sides of the pan.
  4. Pour onto a butter-greased baking sheet and spread evenly. Refrigerate until firm, about 2 hours or overnight.
  5. Rub butter on hands to prevent sticking and roll chilled mixture into small balls.
  6. Roll truffle balls in granulated sugar to coat.
  7. Use a toothpick to make ridges on the sides of each truffle and top with chocolate chips to resemble stems.
