- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 cup (100 grams) light brown sugar
- 1/2 cup (100 grams) granulated sugar
- 1 cup (244 grams pumpkin puree)
- 1/2 cup (100 grams) vegetable oil
- 4 ounces (113 grams) sour cream, at room temperature
- 2 large eggs, beaten
- For the glaze:
- 1/2 cup (63 grams) powdered sugar, sifted
- 2 tablespoons maple syrup
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the streusel ingredients. Set aside.
- In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- In another large mixing bowl, whisk together brown sugar, granulated sugar, pumpkin puree, vegetable oil, sour cream, and eggs until smooth.
- Gradually add dry ingredients to wet ingredients, mixing gently until just combined.
- Pour batter into a greased 9×13 inch baking dish, spreading evenly.
- Sprinkle prepared streusel over the batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, prepare the glaze by mixing powdered sugar and maple syrup until smooth.
- Once cake is done and slightly cooled, drizzle glaze over top. Allow to set before cutting into squares and serving.
