  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (100 grams) light brown sugar
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (244 grams pumpkin puree)
  • 1/2 cup (100 grams) vegetable oil
  • 4 ounces (113 grams) sour cream, at room temperature
  • 2 large eggs, beaten
  • For the glaze:
  • 1/2 cup (63 grams) powdered sugar, sifted
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the streusel ingredients. Set aside.
  3. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. In another large mixing bowl, whisk together brown sugar, granulated sugar, pumpkin puree, vegetable oil, sour cream, and eggs until smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing gently until just combined.
  6. Pour batter into a greased 9×13 inch baking dish, spreading evenly.
  7. Sprinkle prepared streusel over the batter.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Meanwhile, prepare the glaze by mixing powdered sugar and maple syrup until smooth.
  10. Once cake is done and slightly cooled, drizzle glaze over top. Allow to set before cutting into squares and serving.
