Ingredients

Scale
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour, spooned and leveled
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • For the spiced sugar coating:
  • 3 tablespoons granulated sugar
  • 3 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter, granulated sugar, and light brown sugar until smooth and fluffy.
  3. Add the eggs and vanilla extract, mixing thoroughly until combined.
  4. Gradually add the flour, cream of tartar, baking soda, pumpkin pie spice, and salt, mixing until a soft dough forms.
  5. To make the spiced sugar coating, combine the granulated sugar, pumpkin pie spice, and ground cinnamon in a small bowl.
  6. Roll the cookie dough into 1-inch balls, then roll each ball in the spiced sugar mixture, ensuring it’s fully coated.
  7. Place the coated dough balls onto a baking sheet, leaving space between each one to allow for spreading.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  9. Once cooled, serve and enjoy. These cookies pair wonderfully with a warm cup of tea or coffee.

Notes

  • Make sure your butter is at room temperature to create a smooth dough.
  • Don’t overmix the dough after adding the flour to keep the cookies tender.
  • For added flavor, consider sprinkling a touch of extra cinnamon on top before baking.
