- 1/2 cup unsalted butter, softened
- 1 cup dark brown sugar, lightly packed
- 1 cup pumpkin puree
- 2 large eggs
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1½ cups all-purpose flour
- 6 Tbsp unsalted butter, melted
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 tsp pumpkin pie spice or ground cinnamon
- 1 cup confectioners’ sugar
- 1/4 tsp maple extract
- 1 Tbsp maple syrup
- 1 Tbsp milk or cream
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-or-9″ light metal loaf pan with cooking spray or line it with parchment paper and grease it. Set aside.
- In a large bowl, mix the softened butter with the brown sugar using a handheld electric mixer until smooth, about 1 minute. Add pumpkin and eggs, mixing well after each addition.
- Add the spices, baking powder, baking soda, salt, and flour. Mix on low speed until just combined to avoid overmixing.
- Spread the batter evenly into the prepared loaf pan.
- For the streusel, mix the melted butter, flour, brown sugar, and pumpkin pie spice in a medium bowl until it resembles wet sand. Drop handfuls of the streusel on top of the bread batter.
- Bake for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.
- For the glaze, whisk together the confectioners’ sugar, maple extract, maple syrup, and milk in a medium bowl until soft. Drizzle over the cooled bread and let set before slicing.
Notes
Store in an airtight container at room temperature for up to three days or refrigerate for up to a week. Freeze for up to three months.
