- 2 cups shredded zucchini
- 2 cups shredded carrots
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- 2/3 cup all-purpose flour
- 1/3 cup sliced scallions (green and white parts)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: Sour cream or Greek yogurt for topping
Instructions
- Prep the zucchini: Place the shredded zucchini in a colander, sprinkle lightly with salt, and let sit for 10 minutes. Squeeze out excess moisture using hands or a cheesecloth.
- Mix ingredients: In a large bowl, combine zucchini, carrots, garlic, flour, eggs, scallions, ¼ teaspoon salt, and ⅛ teaspoon pepper.
- Heat oil: Warm olive oil in a large sauté pan over medium-high heat.
- Fry fritters: Scoop 3-tablespoon mounds into the hot pan, flatten slightly, and fry for 2–3 minutes per side until golden and crispy.
- Drain and season: Transfer to a paper towel-lined plate and sprinkle with a pinch of salt while hot.
- Serve: Enjoy immediately with sour cream or Greek yogurt.
Notes
Be sure to fully squeeze out the zucchini to avoid soggy fritters. Serve warm for best texture. These can also be made ahead and reheated in the oven.
