Ingredients
1 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup diced apples
1/4 cup sugar (for rolling)
1 teaspoon cinnamon (for rolling)

Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
Beat in the eggs and vanilla extract until well incorporated.
In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and 1 teaspoon of cinnamon. Gradually add the dry ingredients to the wet mixture until combined.
Gently fold in the diced apples for that added burst of flavor.
In a small bowl, mix together 1/4 cup sugar and 1 teaspoon cinnamon for rolling.
Scoop tablespoon-sized portions of dough, roll them into balls, and then roll each ball in the cinnamon sugar mixture.
Place the cookies on a baking sheet lined with parchment paper, spacing them a few inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
