Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup diced apples
  • 1/4 cup sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until well incorporated.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and 1 teaspoon of cinnamon. Gradually add the dry ingredients to the wet mixture until combined.
  5. Gently fold in the diced apples for that added burst of flavor.
  6. In a small bowl, mix together 1/4 cup sugar and 1 teaspoon cinnamon for rolling.
  7. Scoop tablespoon-sized portions of dough, roll them into balls, and then roll each ball in the cinnamon sugar mixture.
  8. Place the cookies on a baking sheet lined with parchment paper, spacing them a few inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
