- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup diced apples
- 1/4 cup sugar (for rolling)
- 1 teaspoon cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
- Beat in the eggs and vanilla extract until well incorporated.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and 1 teaspoon of cinnamon. Gradually add the dry ingredients to the wet mixture until combined.
- Gently fold in the diced apples for that added burst of flavor.
- In a small bowl, mix together 1/4 cup sugar and 1 teaspoon cinnamon for rolling.
- Scoop tablespoon-sized portions of dough, roll them into balls, and then roll each ball in the cinnamon sugar mixture.
- Place the cookies on a baking sheet lined with parchment paper, spacing them a few inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 4-5 days, or refrigerate for up to 1 week. Freezing is also an option for long-term storage.
