Description

A deliciously comforting breakfast casserole combining soft bread, juicy blueberries, and a creamy egg mixture, perfect for feeding a crowd.


Ingredients

  • 8 slices of bread (preferably challah or brioche)
  • 2 cups of fresh blueberries
  • 4 large eggs
  • 2 cups of milk
  • 1/4 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • Butter (for greasing the baking dish)
  • Powdered sugar (for serving, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. Cut the bread into cubes and layer half of them in the prepared baking dish.
  3. Sprinkle half of the blueberries over the bread.
  4. In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and cinnamon until well combined.
  5. Pour half of the egg mixture over the layered bread and blueberries, then add the remaining bread and blueberries.
  6. Pour the rest of the egg mixture over the top, ensuring everything is soaked.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown.
  9. Let it cool slightly before serving. Optionally, dust with powdered sugar before serving.

Notes

Use day-old bread for better absorption of the egg mixture. You can assemble the casserole the night before and refrigerate it before baking.
