A deliciously comforting breakfast casserole combining soft bread, juicy blueberries, and a creamy egg mixture, perfect for feeding a crowd.

- 8 slices of bread (preferably challah or brioche)
- 2 cups of fresh blueberries
- 4 large eggs
- 2 cups of milk
- 1/4 cup of maple syrup
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- Butter (for greasing the baking dish)
- Powdered sugar (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
- Cut the bread into cubes and layer half of them in the prepared baking dish.
- Sprinkle half of the blueberries over the bread.
- In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and cinnamon until well combined.
- Pour half of the egg mixture over the layered bread and blueberries, then add the remaining bread and blueberries.
- Pour the rest of the egg mixture over the top, ensuring everything is soaked.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown.
- Let it cool slightly before serving. Optionally, dust with powdered sugar before serving.
Notes
Use day-old bread for better absorption of the egg mixture. You can assemble the casserole the night before and refrigerate it before baking.
