- 4 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 8 oz fresh cremini or button mushrooms, diced
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
Instructions
- Pat the chicken thighs dry and season generously with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Sear chicken thighs skin-side down for 7-9 minutes until golden, then flip and sear for 3-5 minutes.
- Remove chicken and sauté mushrooms in the same skillet for 5-7 minutes. Add garlic and cook for 1 minute.
- Deglaze with chicken broth, scraping up browned bits, and reduce for 2-3 minutes. Stir in heavy cream and simmer.
- Return chicken to skillet and simmer covered for 20-25 minutes until cooked through.
- Stir in chopped herbs and let rest before serving.
Notes
For a thicker sauce, simmer longer. For a lighter sauce, substitute half-and-half for heavy cream.
