Description

A flavorful Korean-inspired ground beef rice bowl with roasted broccoli, bell peppers, and onions. Finished with sesame oil, ginger, and sweet-savory soy glaze.

For the Beef:

  • 1 lb ground beef (90% lean)
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp grated fresh ginger (or ginger paste)
  • 1 tsp minced garlic
  • ¼ tsp red pepper flakes (adjust to taste)
  • 1 tsp cornstarch
  • Salt and black pepper, to taste
  • 1 tbsp vegetable oil
  • Green onions, for garnish
  • Sesame seeds, for garnish
  • Optional: Gochujang sauce, for spicy topping

For the Bowl:

  • 3 cups cooked white rice (Jasmine or Basmati)
  • 1 head broccoli, cut into florets
  • 2 red bell peppers, chopped
  • 1 sweet onion, cut into large chunks
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Roast the Vegetables: Preheat oven to 400°F (200°C). Toss broccoli, bell pepper, and onion with olive oil, salt, and pepper. Spread on sheet pan and roast 20–25 minutes, tossing once.
  2. Make the Sauce: In a bowl, whisk soy sauce, brown sugar, sesame oil, ginger, garlic, red pepper flakes, and cornstarch. Set aside.
  3. Cook the Beef: Heat vegetable oil in skillet over medium-high heat. Add beef, cook until browned (don’t over-mash). Drain fat. Season with salt and pepper. Lower heat, stir in sauce, and simmer 2–3 minutes until thickened and coating beef.
  4. Assemble the Bowls: Add rice to each bowl. Top with Korean ground beef and roasted veggies. Garnish with green onions, sesame seeds, and optional Gochujang.

Notes

Swap ground beef with turkey or chicken for a lighter version. Serve with kimchi or a fried egg for extra flavor.
