  • 1 teaspoon warm water

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, lemon zest, and lemon juice; mix until smooth.
  4. In a separate bowl, whisk together flour, baking soda, salt, and poppy seeds.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Scoop dough into 1 ½ tablespoon portions and place on baking sheet 2 inches apart.
  7. Bake for 9 to 11 minutes until edges are golden and centers set.
  8. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. To make the glaze, whisk powdered sugar with lemon juice until smooth and pourable; add optional zest if desired.
  10. Thin raspberry jam with warm water, then drizzle over cooled cookies.
