Ingredients

- 1 lb ground beef
- 1 can (15 oz) tomato sauce
- 1 cup frozen or canned corn, drained
- 2 cups elbow macaroni (uncooked)
- 2 cups water or low-sodium broth
- 1 ½ cups shredded cheddar cheese
- 1 tsp chili powder
- ½ tsp cumin
- Salt & pepper, to taste
- Optional toppings: green onions, jalapeños, sour cream
Instructions
- Cook Beef: In a large skillet over medium heat, brown ground beef until fully cooked. Drain excess grease.
- Add Sauce & Pasta: Stir in tomato sauce, corn, macaroni, spices, and water. Bring to a boil.
- Simmer: Reduce heat to low, cover, and simmer 12–15 minutes until pasta is tender.
- Add Cheese: Stir in cheddar cheese until melted and creamy.
- Serve: Top with green onions, jalapeños, or sour cream if desired. Serve hot.
Notes
Swap cheddar with Pepper Jack or mozzarella for a flavor twist. Add black beans for extra protein.
