Ingredients

  • 1 can (15 oz) tomato sauce
  • 1 cup frozen or canned corn, drained
  • 2 cups elbow macaroni (uncooked)
  • 2 cups water or low-sodium broth
  • 1 ½ cups shredded cheddar cheese
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt & pepper, to taste
  • Optional toppings: green onions, jalapeños, sour cream

Instructions

  1. Cook Beef: In a large skillet over medium heat, brown ground beef until fully cooked. Drain excess grease.
  2. Add Sauce & Pasta: Stir in tomato sauce, corn, macaroni, spices, and water. Bring to a boil.
  3. Simmer: Reduce heat to low, cover, and simmer 12–15 minutes until pasta is tender.
  4. Add Cheese: Stir in cheddar cheese until melted and creamy.
  5. Serve: Top with green onions, jalapeños, or sour cream if desired. Serve hot.

Notes

Swap cheddar with Pepper Jack or mozzarella for a flavor twist. Add black beans for extra protein.
