  • 4 teaspoons red food coloring
  • 2 teaspoons cocoa powder
  • ½ cup granulated sugar or sanding sugar (for rolling)
  • 4 ounces full-fat cream cheese, softened
  • 1 large egg yolk (for filling)
  • ¼ cup granulated sugar (for filling)
  • ⅛ teaspoon salt (for filling)
  • ¼ teaspoon vanilla extract (for filling)

Instructions

  1. In a medium bowl, whisk together the flour and cocoa powder.
  2. Cream together the butter and brown sugar until light and fluffy.
  3. Add the first egg yolk, vanilla extract, and red food coloring, mix until combined.
  4. Gradually add the flour mixture to wet ingredients, mixing until just combined.
  5. Chill the dough for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and prepare baking sheets.
  7. Form chilled dough into 1-inch balls and roll in sugar.
  8. Press indents into the cookie balls and bake for 8-10 minutes.
  9. Once baked, let cookies cool completely.
  10. Prepare filling by mixing cream cheese, egg yolk, sugar, salt, and vanilla until smooth.
  11. Fill the cooled cookies with cream cheese filling and refrigerate to set.
