- 4 ounces full-fat cream cheese, softened
- 1 large egg yolk (for filling)
- ¼ cup granulated sugar (for filling)
- ⅛ teaspoon salt (for filling)
- ¼ teaspoon vanilla extract (for filling)
Instructions
- In a medium bowl, whisk together the flour and cocoa powder.
- Cream together the butter and brown sugar until light and fluffy.
- Add the first egg yolk, vanilla extract, and red food coloring, mix until combined.
- Gradually add the flour mixture to wet ingredients, mixing until just combined.
- Chill the dough for at least 1 hour.
- Preheat the oven to 350°F (175°C) and prepare baking sheets.
- Form chilled dough into 1-inch balls and roll in sugar.
- Press indents into the cookie balls and bake for 8-10 minutes.
- Once baked, let cookies cool completely.
- Prepare filling by mixing cream cheese, egg yolk, sugar, salt, and vanilla until smooth.
- Fill the cooled cookies with cream cheese filling and refrigerate to set.
- Serve at room temperature for optimal taste.
