Description
This Salisbury steak elevates a classic dish with a rich red wine and mushroom gravy for a comforting yet upscale experience.

- 1 1/2 pounds ground beef (80% lean)
- 1/3 cup plain breadcrumbs
- 1 large egg
- 2 teaspoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 medium red onion, sliced
- 3 cloves garlic, minced
- 8 ounces cremini or button mushrooms, sliced
- 2 tablespoons tomato paste
- 1 cup dry red wine (such as Cabernet Sauvignon or Merlot)
- 1 1/2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
- 1 teaspoon fresh rosemary, finely chopped
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire, Dijon, garlic powder, onion powder, salt, and pepper. Mix until just combined, then shape into 4 to 6 oval patties. Keep the patties cold while preparing the pan.
- Heat a skillet over medium-high heat with a drizzle of oil. Sear the patties 3 to 4 minutes per side until browned. Remove and set aside.
- In the same pan, add more oil if needed. Add sliced onions and mushrooms. Cook until softened and slightly caramelized, about 8–10 minutes. Add garlic and cook for 1 more minute.
- Stir in tomato paste, then pour in red wine. Scrape the bottom of the pan and let simmer for 5–7 minutes.
- Add beef broth, Worcestershire, thyme, and rosemary. Stir to combine. Return the patties to the pan and cover. Simmer for 10–15 minutes.
- Stir in the cornstarch slurry and simmer another 2–3 minutes until thickened. Adjust seasoning with salt and pepper.
- Plate the steaks over mashed potatoes and generously spoon over the red wine mushroom gravy. Garnish with extra herbs if desired.
Notes
For a lighter version, use 90% lean beef and bake the patties. Serve with creamy mashed potatoes and a vegetable side like glazed carrots.
