Description

A vibrant and hydrating summer salad with sweet watermelon, crisp cucumber, fresh herbs, tangy feta, and a zesty honey-lime dressing. Perfect for hot days and picnics.


Ingredients

  • 1/2 large watermelon, peeled and cubed
  • 1 English cucumber (or 2 small American cucumbers), diced
  • 1/2 cup feta cheese, crumbled
  • 15 fresh mint leaves, roughly chopped
  • 15 fresh basil leaves, roughly chopped
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 12 tablespoons extra virgin olive oil
  • Pinch of kosher salt
  • Optional add-ins: Thinly sliced red onion or shallots, cubed avocado, jalapeño slices or Aleppo pepper flakes

Instructions

  1. In a small bowl, whisk together honey, lime juice, olive oil, and a pinch of salt to create the dressing.
  2. In a large bowl, combine the watermelon cubes, diced cucumber, mint, and basil.
  3. Pour the dressing over the mixture and gently toss to combine.
  4. Sprinkle the crumbled feta cheese on top.
  5. Serve immediately, or chill briefly and serve cold for extra refreshment.

Notes

For a vegan version, use maple syrup instead of honey and substitute feta with a plant-based cheese. Best enjoyed fresh.
