A vibrant and hydrating summer salad with sweet watermelon, crisp cucumber, fresh herbs, tangy feta, and a zesty honey-lime dressing. Perfect for hot days and picnics.
Ingredients

- 1/2 large watermelon, peeled and cubed
- 1 English cucumber (or 2 small American cucumbers), diced
- 1/2 cup feta cheese, crumbled
- 15 fresh mint leaves, roughly chopped
- 15 fresh basil leaves, roughly chopped
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1–2 tablespoons extra virgin olive oil
- Pinch of kosher salt
- Optional add-ins: Thinly sliced red onion or shallots, cubed avocado, jalapeño slices or Aleppo pepper flakes
Instructions
- In a small bowl, whisk together honey, lime juice, olive oil, and a pinch of salt to create the dressing.
- In a large bowl, combine the watermelon cubes, diced cucumber, mint, and basil.
- Pour the dressing over the mixture and gently toss to combine.
- Sprinkle the crumbled feta cheese on top.
- Serve immediately, or chill briefly and serve cold for extra refreshment.
Notes
For a vegan version, use maple syrup instead of honey and substitute feta with a plant-based cheese. Best enjoyed fresh.
