- 1 cup crumbled feta cheese (optional)
Instructions
- Combine ingredients: In a large bowl, gently mix the watermelon cubes, cucumber slices, and sliced mint leaves.
- Make dressing: In a small bowl, whisk together olive oil, apple cider vinegar, salt, and black pepper.
- Toss: Drizzle the dressing over the watermelon mixture and gently toss to coat.
- Finish: Add crumbled feta cheese if using and toss lightly once more.
- Chill: Refrigerate for 15–30 minutes before serving for best flavor and texture.
