- 1 cup crumbled feta cheese

- 1/2 cup fresh mint leaves

- Optional Add-ins:
- 1 cup sliced cucumber

Instructions
- Cut the watermelon into cubes and place in a large serving bowl.
- Add thinly sliced red onion and gently toss to combine.
- Crumble feta cheese over the mixture.
- Add fresh mint leaves throughout the salad.
- Drizzle with extra virgin olive oil and squeeze in lime or lemon juice.
- Season lightly with salt and freshly cracked black pepper.
- Optionally add cucumber, arugula, or a drizzle of balsamic glaze.
- Toss gently to combine and chill for 10–15 minutes before serving.
