- 1 sprig of fresh parsley, chopped
- 1 sprig of fresh marjoram
- 1 sprig of fresh lemon balm
- 1 cup (40 g) grated parmesan or nutritional yeast
- ½ cup (115 ml) heavy cream or plant-based cooking cream
Instructions
- Heat the olive oil in a large soup pot over medium heat.
- Add the chopped onions, leeks, and garlic, sautéing them until soft and fragrant.
- Introduce the mushrooms and continue cooking until they release their moisture.
- Add the cubed potatoes, seasoning with salt and black pepper. Stir well.
- Pour in the broth and white wine, if using. Add fresh thyme, parsley, marjoram, and lemon balm.
- Bring the soup to a gentle boil, then reduce heat and let it simmer for about 20 minutes or until the potatoes are tender.
