- ½ cup milk
- 60g baby spinach, finely chopped
- 1 can (400g) corn kernels, drained
- 1 spring onion, finely sliced
- 60g (½ cup) cheese, grated
- 1.5 cups self-raising flour
- Salt and black pepper to season
- 1 Tbsp olive oil for frying
- Sour cream
- Sweet chili sauce
- 1 avocado, sliced
Instructions
- Gather all the ingredients.
- Prepare your corn by slicing fresh corn off the cob or thawing frozen corn.
- In a large bowl, sift together the self-raising flour, salt, and black pepper.
- In another bowl, whisk together the eggs, milk, and cottage cheese until smooth.
- Pour the wet mixture into the dry ingredients, folding gently so it remains somewhat lumpy. Add corn and other fillings.
- Heat oil in a non-stick skillet, covering the base with ¼ inch of oil.
- Drop spoonfuls of batter into the hot oil, leaving space between each fritter.
- Cook until golden and crisp.
- Transfer to a wire rack to keep warm.
- Prepare toppings like sour cream or sweet chili sauce.
- Serve warm with the chosen toppings.
Notes
Chill ricotta cheese before use for better batter consistency. Avoid overmixing for fluffier fritters.
