A delightful dessert blending ricotta cheese, pistachios, and honey for a nutritious treat.


Ingredients

  • 15 ounces whole milk ricotta cheese, preferably fresh
  • 1/2 cup shelled pistachios, unsalted
  • 1/4 cup high-quality honey (such as wildflower or acacia)
  • 1 teaspoon orange zest (optional)
  • Pinch of sea salt
  • Fresh mint leaves, for garnish (optional)
  • Toasted baguette slices or crackers, for serving (optional)

Instructions

  1. Optional: Preheat your oven to 350°F (175°C). Spread shelled pistachios on a baking sheet and roast for about 5-7 minutes until fragrant. Allow to cool.
  2. Coarsely chop the cooled pistachios.
  3. If necessary, drain the ricotta in the refrigerator for at least 30 minutes.
  4. Allow the ricotta to soften at room temperature for 15-20 minutes.
  5. Optional: Fold orange zest into the ricotta if using.
  6. Spread the ricotta evenly in a serving dish.
  7. Drizzle honey generously over the ricotta.
  8. Sprinkle the chopped pistachios over the honey-drizzled ricotta.
  9. Add a pinch of sea salt.
  10. Optional: Garnish with fresh mint leaves.
  11. Serve with toasted baguette slices or crackers.

Notes

Store in the refrigerator for up to 3-4 days. Prepare ricotta and pistachios separately and combine just before serving for best results.
