- 15 ounces whole milk ricotta cheese, preferably fresh
- 1/2 cup shelled pistachios, unsalted
- 1/4 cup high-quality honey (such as wildflower or acacia)
- 1 teaspoon orange zest (optional)
- Pinch of sea salt
- Fresh mint leaves, for garnish (optional)
- Toasted baguette slices or crackers, for serving (optional)
Instructions
- Optional: Preheat your oven to 350°F (175°C). Spread shelled pistachios on a baking sheet and roast for about 5-7 minutes until fragrant. Allow to cool.
- Coarsely chop the cooled pistachios.
- If necessary, drain the ricotta in the refrigerator for at least 30 minutes.
- Allow the ricotta to soften at room temperature for 15-20 minutes.
- Optional: Fold orange zest into the ricotta if using.
- Spread the ricotta evenly in a serving dish.
- Drizzle honey generously over the ricotta.
- Sprinkle the chopped pistachios over the honey-drizzled ricotta.
- Add a pinch of sea salt.
- Optional: Garnish with fresh mint leaves.
- Serve with toasted baguette slices or crackers.
Notes
Store in the refrigerator for up to 3-4 days. Prepare ricotta and pistachios separately and combine just before serving for best results.
