Ingredients

  • 2 cups cooked rice
  • 2 cups shredded chicken
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • ½ cup milk
  • 1 cup grated cheddar cheese, divided
  • Salt and pepper, to taste
  • ¼ cup melted butter
  • Crushed Ritz crackers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, and milk. Stir until well mixed, then add half of the cheddar cheese and season with salt and pepper.
  3. Grease a casserole dish and pour the mixture into it, spreading it evenly.
  4. In a separate bowl, mix the crushed Ritz crackers with melted butter until fully coated.
  5. Sprinkle the cracker mixture evenly over the top of the casserole, and add the remaining cheddar cheese on top.
  6. Bake for 25-30 minutes, until bubbling and golden brown.
  7. Let it cool for a few minutes before serving.
