Description

Ingredients

  • 4 medium beets
  • 4 oz goat cheese
  • 4 cups mixed salad greens
  • 1/2 cup walnuts (toasted)
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and roast in the oven for 45-60 minutes, until tender. Let cool, then peel and cut into wedges.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the vinaigrette.
